詹姆斯・比尔德基金会公布餐厅与厨师大奖提名名单

本周二,詹姆斯・比尔德基金会公布餐厅与厨师大奖提名名单,费城、圣路易斯、洛杉矶三座城市收获颇丰,爱达荷州博伊西、康涅狄格州米斯蒂克也迎来惊喜入围。
本次提名,是从今年 1 月公布的 510 名半决赛入围者中层层筛选敲定。
博伊西的安索茨巴斯克香肠餐饮馆(Ansots Basque Chorizos & Catering) 入围「卓越待客服务奖」;当地酒吧 Bar, Please! 斩获「年度新晋优质酒吧」提名。
康州米斯蒂克,「造船匠之女餐厅(The Shipwright’s Daughter)」主厨戴维・斯坦德里奇入围「年度杰出主厨」;港口驿站餐吧(The Port of Call)拿下「卓越葡萄酒及饮品配套奖」提名。
往年,这些小众城市几乎从未获得该奖项评审委员会的关注。
圣路易斯、费城向来是奖项常客,洛杉矶更是本次最大赢家,一举包揽 9 项提名。此外,洛杉矶人道移民权利联盟斩获「行业影响力大奖」;本土公益组织无你无我(No Us Without You) 获评「年度人道主义机构」;洛杉矶知名南希・西尔弗顿主厨,荣膺基金会「终身成就奖」。
费城在四大全国核心奖项均有入围:卡莱亚餐厅(Kalaya)竞逐「年度杰出餐厅」、埃米特餐厅入选「年度新晋优质餐厅」;菲奥雷餐厅主厨贾斯汀・麦克尼尔提名「卓越甜品主厨 / 烘焙师」;周末全日餐厅旗下情人酒吧,入围「卓越经典酒吧奖」。同时,费城还包揽中大西洋地区最佳厨师 5 席提名中的 3 席。
圣路易斯拿下三项全国大奖:维西亚餐厅(Vicia)角逐「年度杰出餐厅」、罗宾餐厅入选「年度新晋优质餐厅」;密苏里州克莱顿市的路易餐厅,入围「卓越待客服务奖」,另有两位主厨入围中西部最佳厨师榜单。
该奖项 1991 年首次在纽约颁发,多年来影响力与规模持续扩大,但争议从未间断。疫情前夕,奖项因获奖者种族多元性不足、长期扎堆纽约、旧金山、芝加哥、新奥尔良、洛杉矶等一线餐饮大城,饱受舆论批评。
为此,比尔德基金会展开改革:一方面全面更换评审团阵容(本文撰稿人曾担任往届评审);另一方面,在后疫情时代调整评选方向 —— 打破高端 fine dining 局限,不再只聚焦大城名厨,转而表彰更多元的餐饮从业者。如今,提名申报需说明入围者如何契合基金会核心价值观:打造公平、可持续、健康的行业职场生态。
自 2024 年起,所有申报者还需提交配套视频或文字说明,详述自身经营理念与行业贡献。
对此业内评价两极:批评者认为,评选偏离了「纯粹认可厨艺水准」的初衷;支持者则表示,这场改革早已势在必行。
本届提名仍保留不少往届常客:年度杰出餐饮企业家提名者唐纳德・林克,曾获 2007 年南部最佳厨师;加州最佳厨师提名者戴夫・贝兰,是传奇主厨格兰特・阿卡茨的门徒,其恩师 2014 年斩获五大湖区最佳厨师;新奥尔良经典餐厅艾玛尔餐厅的 E.J. 拉加齐,入围新锐主厨奖,他正是明星主厨艾玛尔・拉加齐之子。
本届获奖名单将于 6 月 15 日,在芝加哥抒情歌剧院正式揭晓。
